Recipe for Mead

Ingredients
4lbs honey
1 tsp citric acid, 1/4 tsp tannin, 1 3mg vitamin B1 tablet
1/2 tsp tartaric acid, 1 tsp nutrient, 1 yeast tablet
2 campden tablets, sterilising fluid

Method
Mark one gallon level in a sterilised bucket. Melt the honey in enough water to reach the gallon level, Allow to cool to 65-70 deg. Add remaining ingredients except campden tablets and dissolve. Cover and leave in a warm place, stirring daily for 3-4 days,After 7 days transfer to a demijohn, fit an airlock and ferment until bubbles stop (about 3 wks) Add two campden tablets and filter into bottles.
