SPINACH SALAD WITH EGG 1 pound spinach leaves 5 green onions, chopped 4 slices bacon (or soy bacon) 2 tablespoons and wine vinegar 1 tablespoon lemon juice 1 teaspoon sugar salt and pepper to taste 2 eggs, hard boiled, cooled, and chopped Wash the spinach leaves thoroughly in cold water. Pat them dry between towels and tear into bite sized pieces. Combine spinach and onions in a large bown. Fry bacon until crisp. Remove bacon from pan and allow to drain on paper towels. Crumble bacon over spinach mixture. In a small bowl, combine vinegar, lemon juice, sugar, salt, and pepper. Pour vinegar mixture over spinach, and toss to coat spinach. Sprinkle with egg.
